Patriotic Cake Balls
I was looking for something fun and easy to make for 4th of July celebrations so I decided to try out making cake balls for the first time. Turns out it was easy and if I would have used a store bought icing it would have been an even quicker process.

I used a store-bought white cake mix and made my own vanilla buttercream icing (recipe below). I baked the cake according to the package instructions and once it was done I crumbled it into a mixing bowl. I then took my homemade icing and added in a spoonful at a time until the consistency was good enough for me to roll into balls. I rolled the mixture into small balls and placed them in the freezer for 15 minutes. Meanwhile, I melted white chocolate in the microwave to roll the cake balls in. If you choose to melt chocolate in the microwave be careful, I burnt the first bowl I tried because I wasn’t stirring it every 15 seconds!
It was now time to chocolate cover the cake balls. I found that setting a cake ball on a fork, dipping it into the chocolate, and using a spoon to drizzle the chocolate over the ball worked best. Once the cake ball was fully covered, I carefully placed it in a mini cupcake wrapper and sprinkled it with red, white, and blue sprinkles. Once the chocolate was hard, they were ready to eat!

Vanilla Buttercream Icing
Ingredients
- 1/2 cup shortening
- 1/2 cup salted butter
- 4 cups powdered sugar
- 2 tbsp water
- 1 tbsp vanilla extract
Instructions

With a hand or stand mixer beat together butter and shortening until smooth

Add powdered sugar one cup at a time and mix until smooth

Add water and vanilla and continue to mix until desired consistency is reached. If you need to stiffen the icing, add more sugar and if you need it more creamy add water.
