Gluten Free Banana Bread Recipe

We are a little over two weeks away from the first official day of fall but I have been slowly transitioning my meals and treats into more fall like foods. During this time of year, I tend to crave hearty soups, warm treats, and pumpkin spice everything! I admit I’ve already had a few pumpkin spice lattes even though the weather is still warm out. They are just so good. Last week I was walking through the kitchen and I spotted a few overripe bananas sitting on the counter. Suddenly the thought of warm banana nut bread seemed so good and so I whipped up a loaf. It turned out amazing and was so quick and easy to make that I had to share the recipe.

Gluten Free Banana Bread

Ingredients

  • 2 cups gluten free baking flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3-4 ripe bananas
  • 2 eggs
  • 1 stick of butter softened
  • 1/2 tsp vanilla
  • 1 tbsp milk
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350º

  2. Combine flour, baking powder, salt and baking soda in a large mixing bowl

  3. In a separate bowl combine butter, sugar, eggs, milk, vanilla and mashed bananas and mix well

  4. Stir banana mixture into flour mixture until you have a moist dough

  5. Stir in chopped pecans

  6. Pour mixture into a lightly greased loaf pan and bake for approximately 50 minutes.
