Veggie Rice Party Mold
This veggie rice dip is my favorite holiday appetizer. I like to eat it with buttery crackers but others like to have it with tortilla chips. It’s super easy to make and you can make it ahead of a party or gathering. I usually put mine in a bundt pan and flip it over onto a decorative dish so it looks nice but you can also put it in a bowl with crackers or chips around it.


Veggie Rice Party Dip
Ingredients
- 2 cups cooked rice
- 1/2 cup mayonnaise
- 1 medium cucumber chopped
- 1/2 cup celery chopped
- 1/4 cup carrots grated
- 1/4 cup green onions chopped
- 2 small tomatoes chopped (remove seeds)
- 2-3 boiled eggs chopped
- 1/2 cup Italian dressing
- Garlic powder and lemon pepper to taste
Instructions

Mix rice and mayonnaise and then add veggies and eggs

Add 1/2 cup of Italian dressing and mix well

Season with garlic powder and lemon pepper to taste

Pour mixture into a pan or bowl, cover and chill overnight

Serve with crackers
Recipe Notes
If you use a bundt pan to create a mold, set the pan in warm water to loosen the mold so that you can plate it.
