Hearty Taco Soup
We had some really nice weather in Nashville this past weekend. The temperature in the mornings and afternoons dipped down into the 60s and it felt a little like fall in the air. It never fails that by this time each year I am impatiently waiting for fall to arrive. So today I decided that a good hearty taco soup was just the meal that I wanted for lunch.

Taco soup was a meal that I always remember my MawMaw having at family gatherings. It’s easy to make and it goes a long way. I called her a few weeks ago for her recipe and ended up finding it in my mom’s recipe box. Since I don’t eat meat and her recipe calls for ground beef, I did make a few modifications to the recipe. I added in fresh chopped onion and bell pepper along with black beans. I’ll insert both recipes below and you can choose to make them as they are or make your own changes. Taco soup is one of those dishes that is easy to modify to fit your own taste and preferences.

MawMaw’s Taco Soup
Ingredients
- 1 package Taco Seasoning
- 1 15.25oz whole kernel corn
- 1 15.25oz chili beans
- 1 8oz tomato sauce
- 1 8oz rotel
- 1 lb ground beef
Instructions

Brown ground beef until fully cooked

Add all ingredients together, do not drain corn or beans

Bring to a simmer and serve with grated cheese and chips of your choice

Vegetarian Taco Soup
Ingredients
- 1/2 red bell pepper, diced
- 1/2 yellow bell pepper, diced
- 1/2 yellow onion, diced
- 1 package taco seasoning
- 1 15.25oz whole kernel corn
- 1 15.25oz hot chili beans
- 1 15.25oz black beans, drained and rinsed
- 1 8oz rotel
Instructions

Sauté bell pepper and onion

Add in all other ingredients and bring to a simmer

Serve topped with shredded cheese, sour cream and chips

I enjoy doing mine with ground turkey and I buy the hot taco seasoning for that extra kick that is cajuns like!!! I double the recipe since we feed slot and like left overs!!! I also add a side of salsa and chips!!!
I did add in some extra cayenne pepper for some spice because the taco seasoning wasn’t quite spicy enough!

This is one of my favorite soups. When I make it for church gatherings I add extra beans – black, pinto, red chili beans- to stretch the number of servings.
I love the recipe because you can so many other ingredients to make it your own. I actually made it today and I sautéed down half of a yellow onion, three cloves of garlic, and two bell peppers before I added my other ingredients. I also used corn, black beans, kidney beans, chili beans, red beans, pinto beans, Rotel, and diced tomatoes. It turned out so good!
