Veggie Bean Chili

Did you know that today is National Chili Day? It just gives us all a great reason to enjoy a nice hearty comforting bowl of chili and today I’m sharing my go to recipe for veggie bean chili. This is a vegetarian chili, however, if you can easily add meat to it if you like.

Vegetarian Bean Chili
Ingredients
- 2 tbsp Olive Oil
- 1 Yellow Onion (chopped)
- 4 Cloves of Garlic (minced)
- 2 15.5 oz Chili Beans
- 2 15.5 oz Pinto Beans
- 2 15.5 oz Kidney Beans
- 2 15.5 oz Black Beans
- 1 10 oz Rotel
- 2 14.5 oz Tomato Sauce
- 1 14.5 oz Diced Tomatoes
- 3 tbsp Chili Powder
- 1 tbsp Cayenne Pepper
- 2 tbsp Cumin
- 1 tsp Paprika
- 1 tsp Garlic Powder
- Salt & Pepper to taste
Instructions

Rinse and drain all beans

Sauté onion and garlic in olive oil

Add in tomato sauce, diced tomatoes, Rotel, beans and seasonings and mix well

Cook on medium heat and bring to a boil, reduce heat and simmer for approximately 20 minutes, stirring occasionally

Serve with the toppings and sides of your choice
